I have made a lot of food in the last few weeks, and I would like to share some of the recipes and websites that have been helpful to my planning process:
Two books have been very helpful with getting started. The first is called Backpack Gourmet by Linda Fredrick Yaffe. This great book has a ton of recipes that are dehydratable and would be great on the trail.
The second book is called A Fork in the Trail by Laurie Ann March. The Kindle e-book version had quite a few typos but I was able to figure the recipes out. This book specifically has quite a few good snack recipes such as cantaloupe-strawberry fruit leather, no-bake hazelnut fudge, and cranberry hazelnut chocolate granola bars. Yum.
Dehydrating Information:
Backpacking Chef has been a great resource for learning how to dehydrate different foods (ground beef, shrimp, frozen vegetables
and more). This site also has a great section of recipes.
Recipes:
Spicy Coconut Thai Quinoa: This is by far my favorite meal so far. I had to stop myself from eating all of it before I could get it into the dehydrator.
Chana Masala: I haven't actually made this yet, but I love this food blog and am sure it will be great!
Mango Lentil Curry: This was pretty tasty out of the pot. I had to fight off Bill so that I would have some leftover for the trip!
Beef Tagine with Israeli Couscous: I have never had real Moroccan food, but this turned out wonderful. It was also my first foray in the world of couscous.
Snack Ideas:
Raspberry Banana Fruit Leather: I used regular baking vanilla and added chia seeds to this recipe. I will make a pineapple coconut one soon!
Watermelon fruit leather is not tasty.
